Minnie Mouse Chocolate Cake with Oreo Flavoured Fresh Cream

This was a cake I created for my nieces birthday party. It was delicate chocolate sponge sandwiched together with luscious oreo flavoured fresh cream

I actually baked a 12inch round cake, which was then cut to shape to resemble Minnie mouse. I then covered the face in the relevant colours of fondant. I then used a edible icing pen in Black to outline the face and facial features!

The bow was also made and shaped with fondant. Please find recipe below.

Ingredients

For the cake

  • Preheat the oven to 180C/160C Fan/Gas 4. Grease and line two 20cm/8in sandwich tins.
  • For the cake, place all of the cake ingredients, except the boiling water, into a large mixing bowl. Using a wooden spoon, or electric whisk, beat the mixture until smooth and well combined.
  • Add the boiling water to the mixture, a little at a time, until smooth. (The cake mixture will now be very liquid.)
  • Divide the cake batter between the sandwich tins and bake in the oven for 25–35 minutes, or until the top is firm to the touch and a skewer inserted into the centre of the cake comes out clean.

For oreo cream

Ingredients:

  • 1 tub fresh double cream
  • 1 pack oreos

Method:

  • Seal oreos in a food bag, smash with a rolling pin until resembles crumbs
  • Whip cream to soft peaks, combine both.

Homemade Baby Chicken Burgers

Apologies for not posting recently it has been quite a full on time. Lockdown hasn’t been getting easier but the lift is slowly creeping upon us so we have light at the end of the tunnel!!

For this post I have done a self weaning recipe its one of the many recipes I used to encourage Aniya to feed herself. She loves these burgers I serve them with blueberries cut in half ensuring they are very soft and squidgy so they are easy for her to chew as she still has no teeth at the moment !! If you blueberries are to ripe you can always boil them to soften or mash them up a little with a fork. Blueberries are a good way to encourage babies to use their thump and index finger to pick up , so it helps aid their fine motor skills.

Recipe:

  • 100g Chicken
  • 4 large florets Brocolli
  • 100g sweetcorn
  • 1 egg (to bind)
  • 1 teaspoon oil

Method :

So this recipe is quite simple. I pop all the ingredients in to my trusted tommee tippee food blender, combine until the chicken has properly minced and all ingredients are incorporated.

Then I heat a non stick pan (I try use non stick so it decreases the use of oil when cooking). Heat the oil and using a spoon dollop the mixture into the pan at the size you want for your little on to be able to handle. I then fry for 6-8 mins on either size ensuring the meat is cooked all the way through. And your ready to serve !!

I hope your little one enjoys. Any left over mixture can be frozen and reused. And this recipe is suitable for 9+ months.

Cheesy Fish Pie

Today’s recipe we have a cheesy fish pie. When I first made Aniya fish I really thought she would be fussy with it but it turns out she loves this meal. It’s fast becoming one of her favourites.

With the fish you want to ensure that the fillets are appropriately deboned so not to risk choking for babies. Fish is a very healthy source of protein for growing babies. It’s also great to mix with other veg or you can simply serve fish baked alone this is so that baby can grab at the soft fish flakes and feed themselves it’s a great way to get them involved.

Recipe

  • 1 white fish fillet (I used basa)
  • 1 medium carrot
  • 1 medium potato
  • 5g cheese

For this recipe I literally prep the veg and pop it into my trusted tommee tippee baby food maker I steam it all together. Once cooked I add in the cheese and blend together and you cheesy fish pie is ready to go.

This recipe can stay refrigerated for 48hours or frozen up to 3 months

If you try this one out I hope your baby enjoys !

Turkey Dinner 6months+

This will be my first recipe upload as it’s just what I have made aniya today for her dinner.

When I had started our weaning journey (I waited until the recommended 6months mark to start solids) for the first month I had only stuck to single fruits and vegetables at a time. Just so she could get used to different flavours and also just in case she had any allergies they would be easier to identify.

I then started blending the veg and fruit together and from around the 7 month mark started to incorporate meats and other sources of protein. Aniya is now on 3 solid meals a day and breastmilk on demand this is just the routine that tends to work for us.

I tend to keep my recipes relatively simple and Aniya tends to enjoy them. For all baby meals I use the Tommee Tippee Quick Cook Baby Food maker, this little gadget allows you to steam and blend it is so easy and straightforward to use. Ulternativeley you can just blend with a hand blender once it’s all cooked out

Recipe:

  • 100g turkey breast
  • 100g Brocolli
  • 1 small apple (I used red gala)
  • 1 small potato (or you can use sweet potato)

I literally peel the apple and potato, chop all the ingredients to then steam. The steamer/blender I use allows me to chose how much water I would like to add when steaming and the length of time I blend for is what changes the consistency of the meal. This meal can be kept refrigerated for up to 72 hours or frozen for 3 months.

As Aniya is getting older I like to keep her main meals quite corse rather than smooth so she gets used to different textures I feel at the beginning of our solids journey I was quite paranoid about chunky foods due to worries of choking I think this was a first mum insecurity but now I’m realising it’s very important for her to get used to chunkier textures as well as finger foods.

I will be doing a post of finger foods real soon so keep an eye out for that !

Welcome to a touch of sprinkles

Hello all that have taken the time to visit my blog, I would like to start off by saying thank you for stopping by.

This is the first time I have ever done anything like this so please be patient with me. I had my baby girl 8 months ago, having spent the majority of my pregnancy and her life in lockdown I had a lot of time to bake and play around with weaning ideas, edible teething hacks and full meals for my little bubba.

Before I start uploading my recipes I would like to give my insight on being pregnant and giving birth in a pandemic. I know I am not alone in how hard its been in this painful time. Having had my first child that has had minimal contact with the outside world and others babies I can only hope this will not hinder her social skills as she grows. She seems to be a very happy and active baby so we pray she continues going forward that way.  I would like other mummy’s to know they have not been alone when they have wanted to lock themselves in the bathroom, cry and pull their hair out. But just so you know your doing a great job even without you knowing it !!

Please let me know if you would have any interest in any particular recipes for baby or baked goods and I will do my best to upload. So please enjoy.
